Blueberry Bran Muffins

Ingredients

  • 1 egg, large
  • 1 cup plain yogourt
  • 1 tbsp. lemon juice
  • 1/2 cup Farmers 2% Milk
  • 1/4 cup honey
  • 1 cup whole bran
  • 2 cups all purpose flour
  • 1/4 cup Sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/3 cup butter, melted
  • 1 cup blueberries, fresh or thawed and drained

Instructions:

  1. Preheat oven to 400°F (200°C). Grease 12 large muffin cups. In a medium bowl, beat egg. Blend in yogurt, lemon juice, Farmers 2% milk and honey.
  2. Stir in bran and let stand 3 to 5 minutes. In a large bowl, mix together flour, sugar, baking powder, baking soda and salt. Stir melted butter into bran mixture. Add all at once to dry ingredients, stirring just until moistened. Gently stir in blueberries.
  3. Spoon into muffin tins, filling to the top. Bake for 20 to 25 minutes, until tops are firm to touch. Cool in muffin tin for 5 minutes and then turn out on rack and cool. Makes 12 muffins.
