Creamed Turnip and Apple Soup

This Creamed Turnip and Apple Soup makes a smooth and delicious appetizer. Best served with a drizzle of Farmers Onion and Chive Sour Cream.

Ingredients
  • 125 mL (½ cup) olive oil
  • 250 mL (1 cup) onion, chopped
  • 250 mL (1 cup) turnip, peeled and chopped
  • 250 mL (1 cup) butternut squash, peeled, seeded and chopped
  • 250 mL (1 cup) carrots, peeled and chopped
  • 250 mL (1 cup) sweet potato, peeled and chopped
  • 250 mL (1 cup) Granny Smith apple, peeled and chopped
  • 1 L (4 cups) vegetable broth
  • 500 mL (2 cups) Farmers by Natrel 35% Whipping Cream
  • 60 mL (¼ cup) maple syrup
  • Salt, pepper and cayenne pepper to taste
  • Farmers Onion and Chive Sour Cream

 

Preparation
  1. Heat the olive oil in a soup pot and sauté the vegetables and chopped apple until the onions are soft.
  2. Add the broth and bring to a boil. Reduce the heat and simmer for 20 minutes, and then purée the hot ingredients.
  3. Return the purée to the pot. Add the Farmers by Natrel 35% Whipping Cream and maple syrup. Heat on low and add salt, pepper and cayenne to taste.
  4. Serve garnished with a drizzle of Farmers Onion and Chive Sour Cream.
