Mustard Tarragon Chicken

This creamy Mustard Tarragon Chicken recipe makes a simple, flavourful dish for a weeknight dinner.

Ingredients
  • 454 g (1 lb.) chicken breasts, boneless and skinless
  • 30 mL (2 tbsp) all-purpose flour, seasoned
  • 45 mL (3 tbsp) Farmers Non-Hydrogenated Margarine
  • 125 mL (½ cup) chicken broth
  • 250 mL (1 cup) Farmers Homogenized Milk
  • 5 mL (1 tsp) dried-leaf tarragon
  • 15 mL (1 tbsp) Dijon mustard
  • 2.5 mL (½ tsp) salt
Preparation
  1. Dredge the chicken in the seasoned flour.
  2. In a large, non-stick skillet, melt the Farmers Non-Hydrogenated Margarine over moderate heat and sauté the chicken breasts until golden brown.
  3. Remove the chicken breasts from the pan and set them aside.
  4. Pour the chicken broth and the Farmers Homogenized Milk into the pan.
  5. Add the tarragon, mustard, and salt.
  6. Bring to a gentle simmer, stirring occasionally.
  7. Return the chicken to the pan and cover.
  8. Simmer for 15 minutes or until the chicken is cooked through.
